How Cheese is Categorized
Cheese isn’t as simple as just a piece of hardened milk to be smeared over bread. There are different types of cheese; most are inexpensive, others are extremely pricey. They can be categorized in different ways.
Cheese can be categorized based on its moisture. They can be soft, semi-soft, semi-hard and hard. This, however, is not considered as an accurate way of categorizing cheese. Some cheeses change their moisture according to their age and the pressure that it’s been packed into molds. There are also other cheeses that are being sold with exactly the same content except their moisture content changes.
Another way to categorize cheese is according to their age. Fresh cheeses are those that spoil easily due to the fact that there are little to no preservatives added. They can be spoiled in a matter of days. Aged cheeses like cheddar and parmesan can go as far as years without being spoiled; instead the flavors actually grow stronger as molds grow.
Some cheeses are categorized according to their ingredients, more specifically, the type of milk used in their processing. There’s the normal cow’s milk, goat’s milk and ewe’s milk. Another sub-category is called double cream, which is soft cheeses like, Brie and Feta, that are enriched with cream, making them great as a
cheese spread
. These soft cheeses are usually consumed within days as they spoil faster than firmer cheese.
In another method, cheese can also be categorized according to the mold they’ve developed due to aging. The three categories are soft ripened, washed rind and blue cheeses. Soft ripened are cheeses that are exposed to mold and are aged from the exterior going inward. Washed rind is aged with some alterations. In some parts, it is injected with some solution like beer, wine or others to add to its taste while being aged. Blue cheese is inoculated with penicillium roqueforti and exposed in humid places to develop mold. They are also popular as

.
Finally, the popular processed cheese is another category where cheese is mixed with other chemicals. These chemicals add color, taste, texture and preservatives. They are relatively inexpensive and are often used as regular
cheese spreads
.
